Haven't been on here for a while so had to go thru all 22 pages to see if this recipe was here. Don't remember where I got it but it is good and easy. Sorry don't have the points for it.
Weight Watchers Skillet Lasagna
1 skinless, boneless chicken breast,ground, or low fat ground beef
1 Tbsp olive oil, not needed if using ground beef
1 small onion, chopped
3 cloves of minced garlic
1 14 oz. can of diced tomatoes, un-drained
1 1/4 cup water
1 8 ounce can tomato sauce, I like Contadina, less carbs
2 teaspoons dried basil leaves
1 Tbsp Splenda
1 Teaspoon salt, I leave it out, up to you
2 1/2 cups broken up whole wheat pasta, any type. I like to use the
dumpling type
1 cup fat-free cottage cheese or ff ricotta cheese
1/4 cup grated Parmesan cheese, fat free if you can find it
Dash basil, pepper, optional
1 egg, could use egg substitute
Shredded fat-free mozzarella cheese
In large skillet, brown chicken, in olive oil, or ground beef with onions and garlic . Add tomatoes, water, tomato sauce, Splenda, basil, and salt, if using. Mix well.
Stir in uncooked pasta. Bring to a boil, stirring occasionally. Reduce heat; cover, simmer for 20 minutes or till pasta is tender, stirring once.
Combine cottage cheese and Parmesan cheese with egg. Sprinkle in basil and pepper to taste, if desired. Drop cheese mixture by rounded tablespoons onto pasta mixture. Cover and cook for 5 minutes. Sprinkle with shredded mozzarella, if desired and microwave for 1 minute till cheese melts. I find if you sprinkle cheese on top then put lid back on for just a minute it melts just fine!
Note: Next time I make this I'm going to try adding half a bag of baby spinach stirred into the mixture before the main cooking time. I love veggie lasagna so feel this will work. No idea of what it will do to the point count. This recipe is suppose to be a from the Core program.
