OTR Recipes

I think it would be great to share favorite, make-ahead On the Road recipes to get out of the fast food and sandwich ruts in between destinations.

Meat Loaf Muffins
We use our favorite meatloaf recipe but if you don't have one, here's a link to give you an idea. Sometimes we toss in cumin and chili powder to get a Mexican flavor.
Meat Loaf Muffins

A couple of variations: leftover turkey and dressing heated in muffin pans for portions that travel well.

Spaghetti and meatballs. Make a cooked spaghetti noodle nest in each muffin cup and put a meat ball in the middle.
  • We eat the same away from home as we do at home. No special recipes needed when you have a stove and oven and a grill right with you.
  • I make a couple of favorite hot dishes & soups at home then portion out in Rubbermaid Take-Alongs. The ones with red covers. Love those containers for the camper because
    A) square shape. B) stack nicely. C). Inexpensive
  • Home made soup in 1 meal portions.
    meatloaf in single serving portions.
    taco meat pre cooked
    chicken breasts, pre cooked for salad or alfredo pasta
    pulled pork pre cooked for sliders or sloppy joes
  • These don't need to be heated up:
    3 bean salad
    Hard boiled eggs
    Carrot chips with hummus
    Sliced, peeled cucumbers in a sugar, vinegar and salt, pepper marinade
    Boughten cookies in the freezer for a dessert - my favorite chocolate covered grahams

  • We don't do any make ahead meals either. When we stop for the night we cook dinner. Many times it is with partially prepared foods like Hormel beef tips & gravy and I will make beef & noodles with it. Or, if stopped near a Walmart we will get a hot chicken and just fix mashed potatoes, gravy and a vegetable to go with it. Burgers are always easy - just let the meat thaw in the frig while you travel. The only thing I don't do is something that is complicated or takes a long time to cook.
  • We normally cook by the seat of the pants. Sometimes we will have something left over for the first nights stop. We will often have something like a tri-tip or chicken or chicken breasts. We always keep potatoes and onions in the pantry. We also go the route of fresh chopped and bagged veggies and bagged salads from Trader Joe's to make life easier. Since most of our cooking is done on the gas grill, I am thinking of changing out my outdoor gas grill from the current Weber Q1000 to a Vector Smoke Hollow. The only reason for thinking of the change is the Vector seems to be way more adjustable and would be easier to cook a roast by turning one of the burners off. Don't really know enough about the Vector to make the $170.00 swap yet!

    We basically do the same thing except we tend to eat BETTER on the road.
  • For breakfast my wife cooks hash browns, sausage, eggs, cheese, whatever else you might like In an omelet, then mixes it all up and put it in a metal tin then in the fridge.
    Same idea for diner: basically makes shepherds pie at home then puts it in a metal Tin. At camp when we are ready, throw the metal tin in the oven to heat it up and enjoy. I've Never seen anyone else do this and everyone we have camped with just loves it. Most work is done while at home. Keeps the "cook work" at a minimum while at camp, but we still enjoy good quality food.
