You did not specify a budget, but 'simple weather station' implies consumer grade rather than pro. Most consumer quality weather station packages will include a rain gauge and probably will not hold up very well on the outside of a MH.
An Indoor/Outdoor/humidity unit will give you a wireless console for all except wind. You can usually find these at HomeDepot/Lowes/WalMart, etc. The Acurite or Ambient models usually are in the $10-100 range. But you might have a problem mounting the outside unit permanently. It is about 1/2 the size of a smart phone, so I had mine on a loop of fishing line and and just hung out when we setup.
For an anemometer, the best solution will be a pole mounted unit that will reach above the roof your camper once you setup camp.
Another option is to build your own - the RaspberryPi has a large number of sensors and 'how to' guides on homemade weather stations.
