Took it to a shop and sounds like they may have gotten to some wires and it's becoming an expensive deal. Any idea if insurance companies cover that kind of stuff?

Sorry but can't think of any part of an insurance policy that covers mice:(.
Now is the time to close off every egress a rodent might find and sleep securely. Caulk, fine wire mesh and ground glass are your friends and you need to start applying it from the underside of the RV, up.
