Is it possible your gray and black tank are 2 different sizes?
Do the same experiment again, only this time, keep filling the gray until water back-up in your drain. Then you'll know REALLY how much is truly holds.
Black tank... I never use the sensors. Just look down the toilet hole! Works ok for me.
