This is what we did. The couch and recliner swap was easy. removed the dinette benches and sold them on craigslist. bought 4 freestanding chairs.
Just keep in mind that dinettes do provide extra storage - poppin_freshExplorerI feel like I researched every bunkhouse floor plan available, but I don't recall seeing one without the standard dinette/couch combo.

I have yet to come across a floor plan with just a big couch as I would be interested in it too.
