I think the only 17" that is close to the same diameter is the LT245/70R17 at 30.6 verses the LT245/75R16 at 30.5.
I nice set of LT265/75R16 at 31.7 on some 8 inch wide rims would look good if you can fit them under the wheel wells. Will effect gearing slightly.
BFG has a LT265/70R16D that is 30.7 inches in diameter and rated to 2835@65. 10.6" wide on 8" rims. http://www.bfgoodrichtires.com/tire-selector/name/all-terrain-t-a-ko-tires

Look at the LT265/70R16E rated to 3195, diameter is 30.63". 10.91 wide on 8" rims. Little or no effect on gears.
Also the Goodyear Wrangler SilentArmor(On-/Off-Road All-Terrain) comes in a LT265/70R16E rated to 3195. Similar 30.6 and width as the Cooper.
