I did my homework, read up on them, and checked out the options on etrailer. Do I need to take the undercover shroud off in order for this to be clear? I see foam at the edges, so don't want to make more trouble than I have to. I don't mind diving in, just don't want to do anything stupid.

Yes, the panel covering the bottom will need removed and then modified to accommodate the receiver.
You are probably looking at the universal adjustable RV receivers. It should work well for you. Stay from the receivers that only attach to the bumper.
