We stop an hour or so before getting to our destination and fire up the AC in our TT, but it is a toyhauler and genny is factory installed. I wouldn't put my dog(s) in our TT while traveling, but I'm sure some do, that will be your call. I imagine your scenario is doable if genny is securely mounted in back of truck bed and proper wiring is installed to power your rig's AC unit, I'm sure some have done this very thing in the past.
