Pull the old one off the wall and splice the wires with a new section of wiring. Make a short run into the overhead cabinet and route the wires through it to the preferred location. Tuck it in nicely in the corner of the cabinet and secure it with adhesive backed plastic tabs (get them in the electrical section at the hardware store). Put a simple wall blank (outlet cover) over the hole where the old thermostat was. It'll look clean and maintain your access to the wire splice. I can envision this whole process taking about 30 minutes.
