Years ago, around 1995, a bartender I knew advised he had invented a brandy Manhattan. Usual ingredients, except he substituted brandy in lieu of bourbon or rye. Really good. As I was being driven back to work....I puked out the window. (Maybe I ingested 3 of these). OK, FF to today. Wanted to make a Manhatan, but no whiskey in the house. So, I got out some Christian Brothers brandy and made one. By Gar, it was good. (Had 2, but no visit to Ralph.... on the Big White Phone). Try one....you might like it.Pan fried Filet Mignon....not for the faint of heartFirst time I tried this: 1-1/2 inch thick filet. S & P and brush with oil. Into pan with no other oil... on medium. Sear for two minutes and turn on other side for two minutes. Don't polk or move and disturb the sear. Take out and rest for 5 minutes. Clean out pan and add 2 tbsp soft butter which was combined with 2 tbsp hot water. Back to medium. Filet back in for one minute and than turn and cook for another minute. Add 2 tbsp softened butter to pan and as it melts, keep spooning/basting over the filet for 2 minutes. Flip and baste for 2 minutes. (A spring of rosemary was added to the butter.) Keep an eye out for your preferred internal temp. Ours was 120 when it came out of the pan and rested for a few minutes. Very tasty and tender.....Re: Dash A/C not working...advice, please ?Back from service. Low R134a was the problem. Probably the compressor seal dried out because I had not turned on A/C in 6+ months. Lesson learned. Will keep an eye out to see if the seal has been damaged.Re: No help could be found for us....Occasionally a small car will be trailing me....close enough so that it is hidden from both mirrors. Not often...but it does show up on our bird's eye camera. BTW...I got a call from Zach couple of days ago to discuss. He listened and thought their agents (i.e., Certified Dispatch Representative) should have been more aware of my circumstances and more helpful. Noise is under coach, in back of two thermostatically controlled fans...only one was running. Ambient air was 50 deg and incoming dash air was 46 deg. Felt both A/C hoses and one was not colder than the other. Dash A/C is an Evans Tempcon RV218552, R134a. (Evans phone and email worthless). No cold air comes out when activated. It makes a buzzing sound for 3 seconds..and silence for 5 seconds. Another 3 seconds of buzz and 5 seconds of silence. This goes on forever. Heater works OK, with same noise/silence cycles. I am promised "highest priority...help in solving technical RV problems...refrigerator, slide outs or a/c units".... If the problem cannot be solved over the phone they will find a professional service center and set up an appointment. There are a lot of disclaimers in this section...as the poster above mentioned. Once again....not too upset. Just disappointed they could not have a GSERS Tech chat with me...or find a service center in SF or Redding, CA to either chat with me or come over and check things out. At my expense.
