If you want to go back to the Saranac Lake area we prefer Rollins Pond for a DEC (State) cg. It's dry camping but you can rent canoes / kayaks from a vendor near site #1. St Regis Canoe Outfitters has 2 stores, one on Floodwood Rd near Rollins Pond and another store right in Saranac Lake. They offer rentals and shuttle services to many canoe spots. And there are untold miles of hiking trails in the area, from easy day hikes to multi-day High Peaks ones.
For private cg's we like North Pole Resorts (the 100 Acre Woods side) in Wilmington, outside of Lake Placid. The 100 Acre Woods is a newer area with nice showers, lots of pull-through sites, and 50A electric. You can take the toll road up Whiteface Mountain or ride the ski lift up at the ski center.
But since we're near Rochester we've done Watkins Glen, Letchworth, and Taughannock Falls also. It's a toss between Letchworth and Watkins Glen as our local favorites. And yes we've been known to hit a few of the wineries along the way.
