Lake Compounce, as was mentioned already.
There are at least one or two campgrounds in Lake George that offer shuttle service to the Great Escape.
Many Six Flags parks (that I'm aware of) do not have associated campgrounds, and I don't think many if any Great Wolf lodges do either; in fact, I think the latter usually require that you stay in the associated hotel to use the water park. I may be mistaken, though.
I know you mentioned it, but I personally think it's hard to be Knoebels.
