Once you let up on it or release the hand valve, if that is what you have, then the water flowing into the tank stops. You do have an RV toilet in your rig don't you?

RV toilets you control the amount of H2O that is used for the flush, if you did a #1, just enough to rinse the bowl, if #2 fill the bowl, so you don't get a poo pyramid!
If you are trusting the level gauge, check it right after emptying as it likely still reads full! :h
