I have a 2015 3500 SRW with the rear air assist and can answer the question on squat. In the regular mode, about an inch no matter how you load it and I've pulled a fiver with a pin weight a little over 3800lbs, which with tools and hitch put me a fair over the truck load rating and it didn't ride any lower than with my personal trailer attached with is several hundred pounds light pin weight wise.
If you use the Alt tow setting which is what I always use to tow with you'll ride about 2 inches at most below the unloaded normal ride height level. The air bags automatically adjust ride height so you don't get any sag to speak of, and depending on how the height sensing link thinks things are going you might even ride a hair taller after hooking up and moving things around.
