Can I keep my 5th wheel plugged in to my '02 Ford Superduty while plugged into 120v house current ?

MFL has it right. You will not be affecting your truck battery at all unless the truck is turned on. There is no 12V power to the RV unless the key is in the run position, 02 Ford F250 have a relay.
