Nc your explanation of the definition would be accurate if your truck had a pivot in the middle. My truck has a solid frame as does yours by looking at your example of your truck gaining 180lbs on the front axle. This would show that your hitch is doing it's job by distributing a portion even though very small to the front axle. The 180lbs didn't come from the extra Big Mac you ate. As someone stated above put a tripod on the scale and level the trailer then measure the weight. Or weigh the truck empty and then loaded to get the same number.
