Michelin XPS Ribs in size LT235/85R16E are only rated at 3042 lbs @ 80 PSIG, so they would be inadequate for the OP's 7000 lb axles. They are highly recommended for 6000 lb axles. For 7000 lb axles, the OP would need a G-rated tire such as the LT235/85R16G Goodyear G614 RST rated 3750 lbs @ 110 psig.
Michelin XPS Ribs are not available in 18" sizes, so they are not a candidate for the OP's truck. The Michelin LTX is a proven tire for this application in either the M/S2 (highway all-season tread) or A/T2 (all terrain tread). The Michelin Defender LTX is a newer, supposedly improved version of the Michelin LTX, but they don't have the proven track record of the LTX M/S2.
