Depends if there is water available where you are going. I fill up so I don't have to worry about looking for water plus I don't want to stop again :)
And time is money. You don't just "top off" 120 gallons of water. If you try to fill your tanks too fast, they won't vent properly and you'll either puke the water back out or crack a tank. Who wants to stand there with the meth heads at the truck stop filling your tanks when you could have done it at home the night before?
