5er: multiple floorplans and based on floorplan, the bathroom is accessible w/o opening slides. Others may not. Same w/ fridge.
Truck: How old are your kids? How are you set $$$ wise in the aspect that if you go w/ a 5er and ext cab, may /will have to get a crew cab down the road. If it was me, I'd opt for the crew cab from the start. Try all 3 (if going new) and how each one feels to you and comfort for all. Ram's Mega cab does offer the most rear room for rear seat passengers, front will be same no matter what cab style.
To go along w/ others have said about payload on a truck and 4,000 lbs was used as an example, that's on the truck alone bumper to bumper. Having owning Fords, I'm most familiar w/ their set ups so here's another example: F350, 4x4, cc, short box, diesel. Has a GVW of 11,500. Truck weight + hitch + fuel will come in around 8500 lbs (again this is argument sake as exact weights are unknown till weighed on a scale). So 11,500 -8,500 leave you w/ 3,000 lbs of capacity left on truck. Subtract the added weights of all passengers and now you have what legally the truck can have on it (say 2 adults = 250lbs, 4 kids = 350lbs for a total of 600 lbs of people) 3,000 - 600 = 2400 lbs for hitch/pin weight or extra cargo in box of truck. 5er can still have pretty much it's max weight as only a portion is on truck, but this is where you have to be careful as to try not to load a lot towards the front of 5er adding to pin weight. Some 5ers are more balanced and fully loaded may not increase the pin more than couple hundred pounds. Others will add pin by a LOT.
Confused still? It is mind boggling. Many a good folks on here w/ really good insight on trucks and 5ers. I've driven semis my whole life, but learned a lot on this site when it came to towing 5er w/ the pick up.
