Three adults and three children in a crew cab pickup would be sort of intimate, in my opinion.  We've routinely made short trips with two adults and 4 children (all under the age of 15) in our crew cab and it is not our favorite way to travel.
I agree that the fifth wheels are great. The DW and I have spent many hours appreciating their space and versatility. However, since we tend to cover a fair amount of distance for our trips, we opted for more traveling comfort over more "camping comfort." The idea being that once we arrive somewhere, the RV just becomes a base for other activities.
One size definitely does not fit all in RVing. Best of luck with your purchase.
