If you're going 5th wheel, get the 1-ton. Just mark 3/4 tons off your list - they get very marginal (pin weight) as you add big cabs and 5th wheels. The dual wheel option isn't very expensive.
As mentioned the megacab dodge doesn't add capacity, just adds rear legroom.
Sounds like you're in a for a bench seat, 4-door, 1-ton diesel. This won't cost $75k.
The other option is going up to a commercial class vehicle...
