We have a relatively small (24 foot) Winnebago Itasca Class C and love it. However we use everything in it and want it exactly as it is ... fully self-contained so we can stay anywhere anytime with or without hookups on hard surfaces or off-highway a bit, as necessary.
It seems like you for some reason want a potentially great little Winnebago rig, but will be "wasting most of it's capabilities" in that what you really need is merely a mobile box that you camp in. I suggest you look for a small used box truck in which you install a couple of windows in, a roof vent in, some cabinets in, bolt down a sleeping bench in ...and you're good to go.
