I don't there is a correct 'answer' to the question. I wouldn't do without the overhead bunk. It is bigger than the back bed and easier to get in and out of. Most times my SO sleeps in the bunk and I sleep in the bed with the dogs. Getting in and out of that corner is acrobatic. The dinette conversion to bed is really for kids. Removing the oven and installing the entertainment center (minus TV) there is on my next to do list. I have never used the oven. Ours is a 25 foot. We do not do long term RVing so cooking is not an issue.
