Sounds like a broken wire on your tank sensor. Sensors are usually just small electrodes on the side of a tank. The wires are usually quite small, so getting bumped by something and broken is not uncommon. Or the wire might have just corroded and broken off. Look for four small wires attached to the side of your water tank. Usually red, green, white and black.
