Does your wife drive the MH? We go from WA to IL in three days but that my wife will take a 4-6 hour driving shift. I could not do it alone. You need to figure out how much time you can drive during a day, Safely. Sounds like you have two conflicting objectives. You want to cross the US and you want to see sites, all in 3 weeks. If you want to tour anything, you will need to block out a day for each site (or two, if in same area). Decide what you want to do in 2016 and then in 2017 and then 2018.
Sorry to sound preachy but with a minimum of 5 days travel from coast to coast, given 12 hour days and no major detours, you will have limited time available for touring.
