Generator Operating question ??

I have an Onan 7500 watt diesel generator. I've just returned from a week of dry camping at the Reno Air Races. Have some questions concerning my generator. I think it's not working correctly.
First off the first day I arrived it was very hot, I'm guessing in the mid 90's, I had the convection oven running, and turned on both AC's all operating off the generator. After a few minutes, the circuit breaker on the generator popped. I reset it and continued running the convection oven and just one AC. it tripped again, reset, and just ran the convection overn. Basically, other then a light, nothing else was on, it continued to run without tripping the CB. Any idea why it was tripping the CB? The 2 AC's and convection oven shouldn't have exceeded the 7500 watt limit. Again, it's 7500watt Gen.
Next quesiton, with the generator running, and the batteris(4-6 volts)drained a little. I'd start the generator and it would go to Bulk charge, I have a Xantrex control panel. The indicator lights would indicate a bulk charge, then an absorption and finally after awhile a float charge, nothing unusual there. While doing this each evening, I'd be there watching TV, and one or two lights on. After awhile, the generator would speed up (increase in rpm's) and the light on the Xantrax controller would show a bulk charge, then after awhile it would go to absorption with the generator slowing, then float, the rpms slowing again. After awhile, perhaps an hour or so, it would go thru this cycle again. Their would be no change in power usage to the generator. Why would it go back to bulk charge after it had already gone to float, and why would the rpm's/ power/noise level on the generator change? One other thing, in the past, and I've checked with techs and this is ok to do, I'd have the generator running and the inverter on, I'd turn the generator off, and the inverter would immediately take over the load without having to turn the TV or other AC devices on. (I'm not not using Air Conditioners or microwave/convection oven on inverter). Now I turn the generator off, with the inverter on, it won't switch over, and I have to turn the direct TV box, TV etc back on. Also, if NO AC electrical is running and I turn the inverter on without the generator running, I now have to push the inverter button 2-3 times to get the inverter on. Any ideas? My batteries are all less then a year old, deep cycle Trojans. Thanks
