Is 50 gallons of fresh water enough for boondocking? I wonder how long that would last. It seems that the smaller rigs have a smaller water capacity.

Yes and No. Tent campers live on a few gallons a day. "Water hogs" use 10 gallons to wash a single plate.
I suggest that boondocking is the best way to see nature. So change your lifestyle and go boondocking. You will discover that you can take a "hospital bath" not a full half hour long shower and enjoy nature.
