It's not that hard of a project. First, as others have said, check under the seats to confirm that nothing is there that would prevent you from doing this. Things like a furnace etc. What we did was to measure how much space the booth took up and wound up buying two 24" wide by 30" high pre built kitchen wall cabinets from Lowes. We bought 3/8" plywood to bridge the cabinets as the counter top base. Since there was a 12 volt and 120 volt outlet on the wall I added the appropriate outlets to the cabinets so I would have multiple outlets in different spots on the cabinets. We kept the old table as it was pretty nice and used it as the spacer between the wall cabinets. Used "L" brackets to mount table top to the sides of the cabinets. Kept the table leg for re use. Screwed the cabinets to the wall. Cut the plywood and attached it to the cabinet tops with glue and screws. We used floor tiles as the counter top and trimmed the whole thing with wood that we stained to match.
The project took my wife and I about 2 days to complete plus staining time. The end result is that we love it and have even more storage room. BTW, we did this while in a CG in during the winter using a drill, mitre box and a borrowed use of a table saw.
