I think I'd avoid a carbureted engine. I've got a 1990 Winnebago Warrior built on a Ford E350 chassis. It has fuel injection. So if you move forward just a couple of years, you can have fuel injection.
My first cars were carbureted. Oh the joys. Come to a stop to quickly and the float valve in the carb would stall the engine. Starting was not always on the first key turn, and you had to "pump the pedal" and give it another go.
Fuel injection is one of the things about modern engines that have made them so darn reliable. I don't think I've ever had a fuel system problem in any fuel-injected engine, with the exception of the fuel pump (in my RV of all things!).
