beef jerky

I am looking for a good recipe for dry ingredients to go into ground meat to make beef jerky. I do not want to use those packets because they contain MSG and huge amounts of salt. I know I need to use salt, but some of those packets are over the top salty. They are a little pricey to boot.

Who has a favorite?

I prefer the ground beef, because it is easier for some of the folks to chew that will be eating it. I will be grinding my own meat, so I know just what is in it.

  • My wife made a batch last weekend from a recipie from "The Chew" television show, it came out very tasteful with no preservatives. I wold imagine you could change the ingredients per your taste. Good luck.
  • gallon of water, bag of brown sugar, cup of canning salt. MIX to dissolve. Pour over meat. Leave for one hour. remove, pat dry. Sprinkle lightly, emphasis - LIGHTLY with seasoned salt. Smoke for 4 hours over very low heat till dry.

    I use an American Harvest Jerky Maker to squeeze out strips of seasoned ground beef. Not messy at all.

    That is a lot of salt; the 1 Tsp is nothing compared to the salt in the other ingredients.

    Just the soy sauce contains over 6 Tsp of salt.

Dehydrate. Cheap. Can do with ground meat but very sloppy.
  • Oh thank you, I didn't know there were packets available with no MSG.
  • I found the big box sporting stores like Gander Mountain, Dicks, and Bass Pro have the BEST beef jerky seasonings!

    That's were I buy mine from because I am very sensitive to MSG. They have the largest selection of seasonings without MSG and salt. Most are 'pure' seasonings that's all and a plethora of flavors to pick from! :B
