Of course I would never turn down a bowl of any of these! - doxiemom11Explorer III also use Miracle Whip instead of mayo. Potatoes, hard boiled egg, celery, onion, 1 small finely chopped dill pickle, fresh cucumber chopped small ( just a small amount) add prepared mustard to taste mixed into the miracle whip. Stir and chill.
Amounts are adjusted based on size of dish being made and with experience to taste over the years. - kevdenExplorerIf it does not have cucumber in it, it seems like something is missing to me.
- Jim_ShoeExplorerMy Mom used to make her potato salad for my Dad's company picnics. She had one "secret" ingredient. A few drops of yellow food coloring. It didn't affect the taste at all, but next to the other bowls of bland looking potato salad, hers disappeared first.

This is pretty much my recipe too, except I use Miracle Whip instead of Mayo. Just a taste preference, mayo is to 'strong'. - Wishbone51Explorer

It's a red potato salad with dill and a pound of bacon. It doesn't have mustard or pickles, which makes potato salads all taste the same. I always get requests for this for family get togethers.
I just printed this one out - how interesting to beat the yolks with the mayo. It sounds absolutely wonderful. Thanks for sharing! Can't wait to try it.
Yeah.. That's one of the things that makes it interesting.. Gives it a real creamy, but not slimy consistency. That, along with the dill and onion powder in the sauce really makes this one special. Truly the best I've ever had. - HappytravelerExplorerMy potato salad consist of boiled potatoes, cooled and cut up, chopped onion and celery, a dozen hardboiled eggs, a little dill pickle, Best Foods Mayo, small jar of Pimento and salt and pepper. I make the same recipe for macaroni salad except I add a little chunks of cheddar cheese to it.
