I like all the crunchies and flavor from the olives and pickles. Feel free to cut the recipe down as full one makes a LOT!
CAJUN PICNIC POTATO SALAD
"Serves 8 Cajuns or 24 other peoples for a good picnic."
10 lb potatoes
2 pints (4 cups) mayonnaise
3/4 cup yellow mustard
Louisiana hot sauce (or Tabasco sauce), to taste
Salt, to taste
2 cups dill relish
2 cups chopped green olives
2 cups finely chopped onion
1 cup finely chopped celery
1 cup finely chopped fresh parsley
1 cup sweet relish
8 hard-boiled eggs
Boil potatoes in their jackets. Let cool, then peel and chop into large chunks.
Mix mayonnaise, yellow mustard, Louisiana hot sauce, and salt together. Add potatoes, along with the rest of the ingredients, and mix well.
You can make this the day before and refrigerate it overnight. You may need to put a little more dressing on it if it is a little dry.
Makes 24 servings

- NYCgrrlExplorerWhen I make tater salad it's generally w/o a set recipe. I just scrounge around the fridge to see what looks good and add it into the bowl. My fav home base includes riced boiled eggs, Hellman's, a little acidic something (normally a vinegar or lemon juice), minced or grated celery and the ever popular salt and pepper.
However, once I tried this recipe (word for word which is a novelty for me), I kept getting requests to make it again AND can actually provide an exact recipe, LOL:

Don't like sweet pickles? Use dill.
