Bumper crop of figs

Our one fig tree has got a bumper crop of large very sweet figs and I have cooked down about ten quarts in simple sugar syrup and frozen them for use latter in the year. If I don't pick them the birds get them fast... Any advice on using fresh figs. I am not a cannier..

If you really enjoy the taste of figs, you could always dry them, then make Cuccidati (Italian Fig Cookies) and enjoy them all year long. These are the best cookies in the world! Of course I was introduced to them as a baby and still go to Auntie's for a taste of heaven. Some day I will have to pry the recipe from Auntie so that I do not lose this taste from the Old Country.

I googled these cookies, as I had never heard of them--they sound divine! If you get the recipe from your Aunt, it would certainly be a treasure. I am going to try and find some online to order.

I don't even bother to peel my figs, just wash, cut in half and dry. As for the fig jam you don't have to can, just make freezer jam! I put it in half pint zip-lock bags, freeze flat and you are good to go. I also have several recipe I found on the web to use them. I wash, cut in half and freeze then when I want to make something all I have to do is thaw. Have you tried them grilled? They are very good that way!

  • Peel the figs, puree them with a little ground clove and use them for the filling in fig bars.

  • get some proschuto (Italian spicy ham) or bacon (pre cooked but not done). Wrap the figs (peeled) then put them on the BBQ for a few minutes. So good.
  • Oh my...you've brought back some very fond memories. My dad was a huge fans of figs. We had one tree in our back yard that was just HUGE, and when I was young, I would crawl up underneath it and eat the fresh figs until I was ready to pop. Of course, I had to fight off the bees and the birds that tried to beat me to them. My mother was a canner and she would make fig preserves and fig candy.
  • Oh too bad you don't can! I LOVE fig jam. You could make a little and put it in the fridge to enjoy, even if you don't can.
  • If you have use of a dehydrator or you can use your oven on low, why not do some that way. Peel and then slice thin, lay on a rack. They will be even sweeter when dried and will keep for along time and can then be rehydrated later.
