Cabbage soup in pressure cooker-protein packed!

I used 1/2 medium head of cabbage, 4 carrots, 1 can of beans, 1/2 cup brown rice, 1/2 cup,(TVP) textured vegetable protein, 1 can stewed tomatoes, 1/2 cup frozen blueberries, 2 tablespoons of pureed pumpkin. Chop, rinse and drain everything that needs chopped, rinsed, or drained. Add whatever other veggies that you want

Seasonings: Turmeric, ginger, garlic, onion, celery seed, dill weed, S&P.
Add the seasonings to the TVP, then add 1 cup of a quart of store bought, (or homemade) veggie stock and stir. Let that soak for about 10 minutes.
Add everything to the pressure cooker, add the remainder of the stock container and about 1 cup water-add 1 teaspoon of olive oil.
High pressure for 25 minutes, natural release.

  • It is to taste, but I would use 1/2 teaspoon of Turmeric/ginger and 1 teaspoon of the rest. Go easy on the salt.
    You could substitute farro, quinoa, spelt, or any other type of whole grain or rice for the brown rice.
    Goes good with a nice loaf of sourdough bread.
