For the low and slow I learned a little trick we use all the time for either the cast or especially the light teflon pans. There is a warm setting after high. Most people just think it is good for real low but if you play with it in that area of the dial you can also really fine tune your heat. Heard about that on another forum and have been using that trick for a couple seasons now. The flame tamers basically do that anyways but for times when you don't try that and you will find you have a lot better control of the heat on that side of the dial and not just use the hi med low type settings.
