Baja Citrus Marinade - scratch
I'd be using the packet kind on the road, but at home I'm prone to mixing up my own.
* - Desert_CaptainExplorer IIIJust roll them in seasoned flour(I like Cayanne, garlic powder and pepper.Bake at 425-450, after 20 minutes turn them andcontinue for 20-25 minutes more until crispy. Season with Cajun hot sauce and Ranch dressing.
- The_Dung_BeetleExplorerI got a Camerons Tabletop Smoker last Dec and just recently started to use it. SERIOUSLY? It has been the HIT of every camping trip we have been on. This little gem smokes, and cooks chicken wings to PERFECTION! We've done 16 lbs of wings in the last month. We have had huge success putting a nice "smoke" on fresh salmon steaks too. This is not meant to replace your big bad boy smokers.. it's for kitchens, portable bbq, gas and electric stoves - beyond PERFECT for traveling!

Cameron's Tabletop Smoker
Here's Tony Neely showing off his chicken wing magic using the Cameron smoker. Personally, I think he cooks the wings wayyyyy tooooo long! I smoke our wings for about 80 min (it's important that you know what setting on your stove is actually MEDIUM). The oven is smoking at about 375°. Then, put on the BBQ sauce of your choice after you've vented the unit for about 5 minutes.

After they are done I put them in a bowl with whatever sauce I have at the time and shake/stir until coated......Sesame Seed Thai Marinade, Franks Hot Sauce, Lime Jerk Marinade. Mix it up...don't have to be just old BBQ Sauce - Super_DaveExplorerLately we have been using a packet of Baja Citrus marinade with some lime juice and cilantro added. Justification has been that they are healthier than the bbq sauce slathered variety. And they taste darn good too!
- the_bear_IIExplorerWell my DW just discovered if you take the wings and or drummettes,sprinkle on Tanquin or your favorite seasoning and cook them in a Tfal ActiFry,they come out great with crunchy skin and moist meat.
