Anyone want to share some recipes for gluten free baked goods? After a year of "Becoming" gluten free, I am ready for some baked goodies and I miss baking. I have mostly healed and things are looking betterafter being slapped on my pattuty for a year...lucky I had my mobile class c portosan...gotta love the boonies!Keep in mind I LOVE chocolate. I have been hunting for recipes but so far I am missing a good brownie and chocolate chip cookies. Cannot have oats either.My table is full of all kinds of funky gluten free flours and starches...so bring it on!The only good part in all this is that I lost 26 lbs but I wouldn't recommend going through what I went through...

The dw and I feel your "pain". After years of not feeling good the dw learned that she must go gluten free. We would love to learn of recipes that we can enjoy together. I am trying my best to support her by not eating foods that she cannot. The dw would love a good cookie recipes! :B

I don't have a recipe, but a friend brought some brownies she'd baked.....the package mix was from Costco. They were the BEST brownies I'd had in a long time. In fact, I thought they were from my favorite recipe!!!!!!!! Wish i had the name on the package, but she said it says "gluten free" on the pkg.

I've got to say that my hubby has been pretty good about this whole thing. When we travel, to make my life easier, he eats what I eat...which isn't always exciting (I am frantically searching for tastey recipes that don't scream gluten free and have found some). At home, dear 20 something daughter will cook some things that he will also eat that are not gluten free. I always make big salads with diy dressings as a staple.For me until about a year ago I felt fine but there were little things that began to change in my lower gi tract until I got hit hard last July and couldn't tolerate much of anything. My little aches and pains that I began to feel at age 48 have disappears without gluten. I no longer feel like I am 70...really nice!Thanks for your reply.Donna

My dw had to go gluten free 5 years ago after years of suffering. The best books I have found are by "The Gluten Free Gourmet" go to Amazon and search on that term and you will find all of Bette Hageman's books. I have bought and given away so many of her books to others who are suffering many of the same symptoms that I could start my own library LOL. Anyway, she has a book dedicated to baking that is good, our favorite is the titled Comfort Foods. Get her books, you will not be disappointed.

The King Arthur flour web site has quite a few gluten free recipes.

I've never used chickpea flour for baking more than flat bread but it's awfully delicious to coat shrimp with.

I cooked in on a cookie sheet with sides after flooding it with olive oil, then I poured in the chickpea "batter", and cooked it at a very hot temperature, almost like frying it. It was great, and crispy on the edges.

I mostly tend to use pre-made gluten-free crusts or cheese pizzas now and add my own toppings. On my first attempt at adding toppings to a GF cheese pizza, the crust was not up to the extra weight and dripped through the oven's wire racks. . . let's just say that it was messy. I cook them on a cookie sheet now over a bit of sprinkled corn meal.

I found Vitacost.com to be a good source for flours and they seem to be discounted and free shipping if you meet minimums which is not hard if you bake a fair amount...and the flours are pricey anyway.

Made "bread" today...a modified recipe using Bob's all Purpose flour and it turned into hockey pucks...but I will eat it all...just need to work on the flour mix. I have almost all the flours I need to experiment...the all purpose just seemed easy at the time. Need to get some almond and garbanzo flour to play with.

I don't have a Recipe but you can get Gluten Free Flour from http://www.bobsredmill.com/. They have a link to a few Recipes as well.

Aldi's does a pretty good job of marking their goods with GF and I've so far tried their pizza dough...which was okay but I want to make my own and probably more whole grain.

I will have to get the brownies though!!!

We have the Aldi chain of stores here in central Indiana. They recently started carrying GF mixes. I made their brownies and they are delicious. They also had some cake mixes and a cornbread one. Very good.

To date I haven't made a loaf of GF bread I would eat. Even bought a GF breadmaker and haven't liked any recipe for bread yet. Never ate a lot of this stuff anyway, but really do miss a great slice of toast.

Dcason.....Use a bread recipe for pizza dough.

On the road in a six week trip with a tent I used the crisp taco shells for pizza. They can be cooked over a campfire in a pan with a lid, in an oven, microwave or frying pan on a stove.
I love Bette Hagmans cookbooks also but the biscuit recipe she uses in on of her early books is terrible. Has way too much baking soda it. She inproves it in later books.
