Easter

Wow. Empty nesters now, family has moved away, kids are away at college and can't come home or in another country, so it's just the two of us.
I found a 1.5 lb organic smoked ham at Whole Foods. Our Easter dinner has traditionally been spring foods, not a typical hot meal. Usually room temp ham, deviled eggs, baked beans, German cucumber salad, pickled beets, sometimes parsnips, mayo potato salad and German potato salad, sometimes baked mac and cheese, etc.
So I'll make 2 deviled eggs, a small portion of pickled beets, and I've got 2 potatoes for potato salad.
This is kind of funny. Usually Easter was "my" holiday to have the family over and I'm used to cooking for 15 or so people.
We will have our simple but yummy dinner and probably go to a movie. Don't want leftovers because we're going right back to our Weight Watchers. Well, one leftover, I'll save enough ham to make 2 ham salad sandwiches. Love those.

In case I get busy and don't come back before, a Blessed Easter to all those who observe it.
  • Another empty nester with one granddaughter firmly ensconced in my home. In the process of selling my apartment of 20+ years and keeping it ready to show to prospective buyers.

    Tomorrow, morn, we'll take the young lady to an egg hunt at a local museum.
    Then I'll take out the good tableware, lay a blanket on the L/R floor and order take out from Citarella's for Easter dinner. As a special treat, we'll eat whilst watching a Harry Potter movie.

    We'll split an order of green pea soup and creme of asparagus between the 3 of us(DGD wuvsss vegetable soups as do we)to start and and follow w/ stuffed Cornish hen for the lil grrlie and slices of rare roast leg of lamb for the adults. I'll pull some roasted asparagus and mashed potatoes out of the fridge and end the meal with individual pastries from a local pastry shop.

    Sometimes not cooking is a lot of fun;).
  • Leo, Our CT friends are waiting till May to head north, as are we. We'll be joining neighbors here in Bonita Springs for a potluck Easter dinner, and my plan is to try just 1/2 cup of each offering until my plate is full. Then, I'll record my calories to MyFitnessPal

    WW didn't work for me, but I'm down 40 lbs. and four inches around the waist since Christmas! I'm glad the DW saved all my shorts and shirts over the past weight-gaining years.

    We have decided to take our family out to dinner, after church. That makes it a holiday for everyone.

    Afterwards, we will come home and let the kids hunt a few candy filled plastic eggs and have dessert. terry r.

    A blessed Easter to you too, Leo. After fasting from Thursday sundown to Saturday after Vigil, we go home to BBQ pork ribs, apple slaw, yeast rolls and baked potatoes: all except the slaw will be done in Dutch ovens over the fire of course
  • First Camping weekend, Easter Weekend! We are heading to a Salt Fork State Park, Ohio. Our kids and grandkids will meet us there after church on Sunday. We will have an egg hunt, eat and play. In order to do this, we paid through Monday even though we will leave late Sunday afternoon.
  • Not doing anything for Easter this year. I think this is the first year in my 59 years... zilch! nada! nothing! No special dinners, no special activities, zip! Actually, Peanut Butter and Jelly sandwhiches sounds pretty good!

    My son does not embrace our historical religious views any more (I don't know what he's thinking) so Easter has no significance to him. Although disappointed in his world view now, we're not going to push our ideals on him. So, there goes that!

    My daughter is 600 miles away with her 3 girls. Just too far. Although she still embraces all the traditional values, she's just too far away.

    So that leaves just my wife, me, and the dog! So this year, we decided, NADA! Although we are going to get our long haired dachshund a small basket full of doggie treats!

    But to everyone else ... I have you all have a wonderful and magnificent day!
