Jalapeno Cornbread
1 box prepared cornbread mix
1 can creamed corn
1/2 cup grated cheddar cheese
1/2 cup finely chopped green onion
3 Tblsp finely chopped fresh jalapeno pepper
Preheat the oven to 400 degrees F. Grease a 10-inch cast iron skillet.
In a large bowl, prepare the cornmeal mix according to directions, and stir this into the corn, cheese, onion, and jalapeno pepper, and stir to thoroughly combine.
Pour the batter into the cast iron skillet and bake for 30 to 35 minutes, until a toothpick inserted in the center comes out clean. Transfer to a wire rack to cool.
