Favorite Cornbread Recipe?

Since there is a thread here about what to do with a hambone, I thought it might be apropos to start a thread about your favorite cornbread recipe. Do you have a recipe and/or any tricks to making fantastic cornbread?

Cornbread recipes are usually pretty inexpensive to make, so I'm looking to keep my kitchen warm through the rest of this winter trying out new recipes!

  • I like Mexican Spoon Bread. It's more moist than regular cornbread, very good with beans.
    Mexican Spoon Bread
    Combine:
    1/2 cup cooking oil
    2 eggs, slightly beaten
    1 can cream corn
    1 cup yellow cornmeal
    3/4 cup milk
    1 tsp salt
    1/4 tsp baking soda
    1-1/2 cups grated cheese
    1 medium can green chilies, finely chopped
    1 grated onion
    Pour into heavy baking dish or cast iron skillet. Bake 1 hour at 400F. Serve as a side dish like a dressing.
  • CORNBREAD

    1 cup flour
    1/4 cup sugar
    4 teaspoons baking powder
    3/4 teaspoon salt
    1/2 cup cornmeal
    1/2 cup coarse-cracked cornmeal (polenta)
    2 eggs
    1 cup milk
    1/4 cup olive oil

    Mix flour, sugar, baking powder & salt together, then stir in cornmeal and polenta meal. Make well in center and add all wet ingredients mixing just till smooth; do not over beat. Pour into greased & floured pan and bake at 425 degrees for approximately 20 - 25 minutes.

    You don't have to mix in polenta meal, you can use all straight cornmeal: I like the crunchiness of polenta as it adds character to the finished product. Along with butter, I also use honey . . . yum.
  • I find that the recipe on the Albers Cornmeal box is good except that I use 1 Tbs. sugar instead of 2/3 c., as I don't like my cornbread sweet. And I bake it in a cast iron skillet. That give it a nice crust.
