Fiesta chicken for two using small-size crockpot

I have one of those small crock pots and use it a lot, just the two of us in the family now that the kids are all grown. I have had a lot of luck just halving some of our regular crock pot recipes. I've learned you can half a can of soup use one half and freeze the other in zip-lock bags. Thaws very quickly and if you freeze it flat it doesn't take up a lot of room in the freezer.
