Food For Daytona 500?

I'm having some guys over for the Daytona 500 in a few weeks and am looking for some menu items. My main dish is going to be redneck tacos.

To make redneck tacos, I'm going to make some pulled pork in my smoker. You then put the pulled pork in a corn tortilla wrap with some BBQ sauce and cole slaw.

Any other suggestions?

    Looks like an interesting recipe. Do you know if you can premake the batter and store it overnight in the fridge and then cook it?

    I'm thinking about bringing this to a Rally I'm going to be attending!

    Cornbread casserole

    Ingredients
    1 (15 1/4-ounce) can whole kernel corn, drained
    1 (14 3/4-ounce) can cream-style corn
    1 (8-ounce) package corn muffin mix (recommended: Jiffy)
    1 cup sour cream
    1/2 stick butter, melted
    1 to 1 1/2 cups shredded Cheddar
    Directions
    Preheat oven to 350 degrees F.

    In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.
  • Have you thought about a traditional NASCAR menu? And in case you don't know what that is. It is Southern Fried Chicken, Not hot, but not cold, Usually packed in a cooler the night before race day. And yes the fixins should be with it. Taters, or tater salad, corn on the cob, And maybe some banana sandwiches. You will need 2 coolers. One for the food, and one for beverages. Which BTW, Should never be Chardonnay, wine or any such sissy drinks. you will need Pepsi, Cheerwine, or beer

    AND Just to make it more realistic. Put a large plastic tarp under the TV, and when you are finished with the chicken. Throw it at the bottom of the screen. This is known as the chicken bone section.
  • Well, it lasts about 5 hours so, for each guest that would be 5 six packs and a nickel bag of peanuts.
  • Hummm, Long Island, Daytona, Tacos, pulled pork? I think I fell into a deep sleep and have my regional ethnic foods all confused. BBQ sauce? I no longer think, I am sure.:h
