Grandma Mary's Secret Prime Rib Sauce

I cut this out of a newspaper years ago and have yet to try this. With the Holidays coming up........

Combine following ingredients and simmer two hours. (Can be made a day ahead):

1 lb. sliced mushrooms
20 chopped green onions
1/4 cup Worcestershire sauce
1/2 cup Kitchen Bouquet
16 drops of Tobasco sauce
1 + 1/3 cups of catsup
1 cup white wine
1 cup sherry
4 tsp chili powder
8 tbsp sugar
6 tsp salt
4 tsp pepper
6 oz (or 1 + 1/2 sticks) butter

    For me horseradish...DW likes A-1 on all meats!! Might give secret sauce a try!

    The only thing that goes on Prime Rib. Horseradish......and it has to be the end cut. :B

    oh and for a THIN sauce, I like to take equal amounts of small capers and bottled green peppercorns in brine, crush them so the peppercorns are not whole, but flattened, and finely mince one shallot, and saute in a stick of butter. When shallots are softened, add equal amounts of brandy and wine to the pan, maybe 1 cup each. reduce by half and serve.

    i usually serve bowls of two things on the side of prime rib or filets: a horseradish sour cream, and Bernaise. well, and a large dish of sauteed mushrooms.
    the horseradish sauce is great with the addition of a good amount of penzeys shallot pepper blend.

    putting sauce on meat is not my cup of tea. I always said I want to taste the meat not the sauce. one of my kids puts catsup on T-Bone steaks. DW uses A-1 sauce on every thing.

    Sounds like a good au jus...will have to try.

    a little sauce on any meat never hurts. the idea is to enjoy the taste, however it is presented, plain or smothered.
