Here is a little Trick I learned in the Military. One Day when I was in Germany I was Grating Eggs using a hand Grater, One of my Mess Seargeants walked by and said, let me show you a better Way. He got a French Fry Basket and pushed the Eggs through the Wires on the Basket, They came out exactly the same and I did not have to worry about hitting my Nuckles on the Cheese Grater.

I use an egg slicer. One way, then turn 90 degrees.I tried Alton Brown's method of baking eggs at 320F for 30 minutes. OK, but did end up scorching the towel (!) and I'm not convinced they peel any easier. Next time I may do in the muffin pan (as his earlier method recommended). They did come out nice and "fluffy" though.

I have not had a problem peeling eggs since I settled on a method, one of many guaranteeing success, that is simply boiling them and then a plunge in ice water. Works every time for me and ended decades of frustration. Boil 12 minute and then immediately into ice water.

Boil 12 minute and then immediately into ice water.That's similar to what I do, with a twist; there is a youtube video with that method, but the guy starts first with boiling water and boils for 13 minutes exactly, then put in ice bath for about 5 minutes or so and then peel right away. I've tried it about a dozen times with fresh or older eggs about a dozen times and it works every time. The shells come right off. I think starting with the boiling water is one of the keys, along with peeling right after the ice bath.

I use a pairing knife. I hold the egg in my hand and start cutting. I like my deviled eggs on the chunky side.

Maybe I'm missing something here. I've always just used a knife to slice eggs and never saw the need to use a special contraption to cut up eggs. I guess if you want real pretty neat and thin slices, one of those egg slicers would work though.

I was in a hurry and just used my hand to squish them. Worked great.
Make sure your hand is very clean or use a glove.

That's what we do only we use a small glass bowl. Works great and you just quit slicing when you have the texture you want.

I chop my eggs with a bench knife right in the bowl that I mix the egg/potato/chicken salad in. That way, you don't have to clean up the egg yolk crumbs from the cutting board. I use the bench knife anyway to scoop the diced ingredients for the salad, so a couple of less things to wash up!

I just use my 10 inch chef knife, and rock it back and forth over the eggs till chopped.
Then I scrape up what flew out onto the floor, and add that to the mix -- it adds a little extra "tang" to the salad.
