That's similar to what I do, with a twist; there is a youtube video with that method, but the guy starts first with boiling water and boils for 13 minutes exactly, then put in ice bath for about 5 minutes or so and then peel right away. I've tried it about a dozen times with fresh or older eggs about a dozen times and it works every time. The shells come right off. I think starting with the boiling water is one of the keys, along with peeling right after the ice bath.
