Hard Boiled Eggs

Cover the eggs with cold water in a pot.
Bring the water and eggs up to a boil.
Once the water starts boiling, cover the pot and turn off the burner.
Let the eggs sit in the hot water for, depending on the size of the egg, 15-20 minutes.
Rinse them in cold water, or ice water, to cool.

Older eggs peel easier than very fresh eggs.

The 3 minutes you're thinking of, is probably a soft boiled egg. I like mine at 5 minutes.

For hard-cooked; I put mine in regular unsalted tap water, bring to a boil, and let 'em go for ten minutes after that. Then remove from heat, drain, and replace water with cold from the tap. Peel when cool. I seem to get the best results for easy peeling that way. Here's a tip; Hard boiled is one place you do NOT want just-laid eggs. They're nearly impossible to peel when that "young".

Thanks for the quick responses. I'll try your suggestions.

We do the bring to a boil, turn off with 20 timer. Seems most consistent.
If the outer yolk is green its over cooked.

We go to Costco and get the pre-peeled ones.....lol. OK, you do get too many in the industrial pack but it does make it easy. :)

We go the other way. Bring water to a boil, using a spoon lower eggs into boiling water, boil 10 minutes, remove from heat and let set 5 minutes, pour off hot water and fill pan with cool water, after 2 minutes peel. Still slightly warm and shells almost always come off very easily when cracked all around even fresh from the store.
Read that technique some where and it works well. Easier to time if you start with the water already boiling.

I use the fail safe method . Go to Costco buy the hard-boiled & peeled for $4.59 for 24 eggs. They always come out good.

put eggs in cold water, bring to boil, set timer for 10 minutes. Pour out hot water and replace with cold water and some ice cubes until cool. Works every time for me.

I bought a quisinart egg cooker (7 egg) and it was the best thing I ever bought for eggs.

Just put in an ounce or two of water per the measuring cup and flip the switch, the end.

Soft boiled hard boiled, they come out perfect and no watching.....just wait for the finish alarm.

Try the oven. 325F for 30 minutes. Use a mini-muffin pan to hold them so they don't roll around. I use one of the silicon flexible pans. You will get a few brown spots on the eggs where they touch the pan.
