We do a recipe very similar, called "dry soup."
Brown 1.5 cups of rice with chopped onion.
We cut up cooked chicken (left over breasts or rotisserie chicken from Costco). You could alternately add Mexican sausage (chorizo), ham, diced pork or other meat.
Add an 8oz can of diced and spiced tomatoes (e.g., Red Gold labeled "chipotle" or "chili ready." )
Add 3 c. boiling water with two chicken bouillon cubes.
Add jalapeno peppers, cover and cook over low heat until water absorbed in rice (about 25 minutes for 1.5 cups of rice that we make).
I like it wrapped in flour tortilla with sour cream, shredded cheddar and salsa. Garnish with sliced black or stuffed green olives if you like. My wife likes it just on a plate with toppings.

Typing it out makes it sound more difficult than it is. :)
