Hush puppies

Here's a great recipe for hush puppies.

Sweet Hushpuppies

1 cup all purpose flour
1/2 cup sugar
1/2 cup yellow corn meal
2 tablespoons baking powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup very finely chopped onions
1/2 cup very finely chopped green bell peppers
1/2 cup very finely chopped green onions (tops only)
1 egg, beaten
oil for frying (I deep fry)

In a large bowl, combine the flour, sugar, cornmeal, baking powder, salt and pepper. Mix well
breaking up any lumps. Add the onions, bell peppers, green onions and egg, stirring until
thoroughly blended. Note: Mixture will be very dry at this point, but it will get moister as it
sets. Cover and refrigerate for about 2 hours, but no longer than 3 hours or the batter will get
too moist.
In a large skillet over high heat (or deep fryer)) heat oil to 350°. Drop batter by tablespoons full
into the hot oil and fry in batches until cooks through and dark golden brown on all sides, about
5 minutes total, turning at least once.

To the box ones Ive added dried onions and some garlic powder, really good.

I just buy Hush puppy mix in the store. You will find it in the flour area near the fish batters and bread crumbs.
You just add water, the good thing is you can make as much or as little as you want!

Just FYI, the frozen ones my friend served were very good. They were Savannah Classics Hush Puppies Original.

I must be more adventurous than the rest of my family, as far as culinary tastes. LOL Growing up we had the basics - meat, potatoes, veggies, soups, stews, etc. Mom never made Chinese, Mexican, or anything else - basically PA Dutch style cooking. I never had a hush puppy until I was an adult, so can't ask mom how to make them. LOL

From River Road Recipes

1 cup cornmeal
1 tsp baking powder
1 tsp salt
1 tsp sugar or Splenda
1 cup flour

1 egg
3/4 cup milk
Dash of red pepper
Chopped green onion tops
1 T. grated onion

Sift dry ingredients into bowl. Beat egg, add milk, and add this to cornmeal mixture. Add onion and red pepper. Drop by spoonful in hot deep fat (I use a Fry Baby/Daddy at 375*) and fry until brown. Should you like a lot of crust, these may be patted flat.

Yields approximately 2 dozen.

BTW, these are so good served with real butter and a cup of coffee or sweet iced tea.

My Dad always made them this way:

1 C self-rising cornmeal
1/2 C self-rising flour
1 large egg
1/2 C of beer
1/2 C finely chopped onions

Batter should be moist, but thick. Drop by tablespoons in hot oil and cook till browned.

I can eat a big plateful of them with catsup!

INGREDIENTS:

oil for deep frying
1-1/4 cup yellow corn meal
2 cup flour
3 tsps baking powder
1 tsp sugar
1 pinch of salt
1 small onion, finely diced
1 egg, beaten
2 cup milk
2 cup whole kernel corn
1/4 cup sliced green onions
1 tsp cracked black pepper
METHOD:
In a home style deep fryer, such as a Fry Daddy, heat oil according to manufacturer's directions. In a large mixing bowl, combine corn meal, flour, baking powder, sugar, salt and pepper. Mix until all ingredients are well blended. Add diced onions, egg, milk, corn and sliced green onions. Continue to mix until all ingredients are well blended. The batter should be smooth and free of any lumps. Using a soup spoon or a small ice cream scoop, dip one hushpuppy and deep fry as a sampler. The hushpuppy will be done when it floats and is golden brown. Correct seasonings and cooking time if necessary. Continue to fry until all are done.

I getting hungry now... Nothing better then fishing in an country stream or stream fed small lake in North Arkansas and eating fresh catfish with hush puppies... There is new fishing hole just about every 30 minutes apart north of Jacksonville AR...

Used to run the Misile Silo's back in my AF and DOD Contractor days and carrying good fishing equipment was a necessary item to have aboard your truck...

That's pretty much my approach also, except I don't cut the water, but I add flour until it's right.. If I don't have they Jiffy handy I just use a standard cornbread recipe.
Minced onions are necessary, but chilies play well with the onions. Don't make them too big either, about golf ball size is maximum for me. They have to be deep fried of course, preferably right after the catfish.;)
