Kale chips

Can't stop eating these.

Bunch of kale, preferably organic
EVOO
sea salt

Preheat oven to 275 degrees, wash, remove ribs, dry, tear into large chip size, massage with tiny amount of EVOO, sprinkle VERY lightly with sea salt, (they shrink a lot, and will become too salty, bake for 15 to 20 minutes, or until they crisp wisps of kale chips.

  • The Kale chips look great.

I made a kale, italian sausage, mushroom, mozzarella and pine nut pizza two nights ago on a gluten-free pizza crust, that was amazing.

Life is too short for cheap salt and olive oil. there is a difference. Organic EVOO and Maldon sea salt flakes.
  • As Giada says, when cooking any Olive oil will do. When eating uncooked, EVOO for flavor.

We also enjoy Kale chips, they're something else to do with kale besides making "green" drinks in our VitaMix! If you think there are no differences in grades of olive oil, may I offer you some Lampante grade for that salad? :)

"There's no difference in olive oils except flavor"
It's all about when it's pressed, but it is still olive oil and that is all I was saying. You're still talking flavor because your Lampante is nutritionally the same.
  • That sounds so good. Being a vegan I don't see a lot of recipes and this is a keeper. I was just rewatching Forks over Knives and the two things that are really healthy and really lacking in American diets are greens and beans. Thanks for posting this. I'm trying it tonight

Can't be beat if you like your salad a la flambe! :B

  • I wouldn't use it for anything I was going to cook. There's no difference in olive oils except flavor and it needs to be eaten "raw" to get the flavor.
  • It's so hard to find Virgin today, let alone Extra Virgin.
  • For those who don't watch Rachel Ray: "EVOO" is extra virgin olive oil.

    Side note on that subject:
Before you spend the extra money for "extra virgin", do make sure you're getting what you pay for. There's been a lot of hanky-panky in that department over the last few years. Here's a link to a story on the subject that came out just today.
